This exceptional Idido Natural coffee originates from the renowned Yirgacheffe region of Ethiopia, a locale celebrated for producing some of the world’s most distinctive coffees. The farm is owned by Girma Tamiru, whose name, translating to “Grace Miracle,” truly embodies the meticulous dedication and care invested in every stage of coffee production. Girma Tamiru’s farm, spanning 2.5 hectares, has been meticulously cultivated for three years. Situated at an impressive elevation of 2170 m.a.s.l, it boasts an ideal altitude for nurturing high-quality coffee beans. The farm has 10 permanent employees and employs 100 workers during the harvest season. The coffee are Heirloom variety, thriving under the natural canopy of “false banana” trees, which also contribute to local food production as “Kocho”.

 

While our coffee is cultivated using organic practices, it not have certifications due to the high costs associated to these . The annual harvest period extends from November to January. To enhance its distinctive profile, our Idido Natural undergoes a precise processing method. Cherries are carefully placed in barrels for 9 days of anaerobic fermentation. Following this, the coffee is meticulously dried on raised beds for 13 to 18 days. This specific processing choice is purposefully designed to maximize the intense and juicy flavors that are the hallmark of this coffee. This Idido Natural offers more than just an exceptional sensory experience with its intense and juicy flavor profile. It also embodies a profound commitment to sustainable farming practices and provides vital support to the dedicated coffee-producing communities in Ethiopia.

Meticulous Quality

We hope to provide our customers with the best and therefore pay close attention to all factors affecting the quality of our coffee. These include cultivar, growing altitude, climate, soil chemistry, harvesting and processing conditions, drying method, storage conditions, transportation, roasting conditions, grind size, brewing water and brewing recipes.

Highly Curated

Each one of our coffees is carefully selected by our roasting team. Before we buy in bulk, we go through many samples from different specialty coffee estates. Often times we are working with the most renowned coffee producers in the world.

Small Batch Roasting

All our coffee is roasted in our Roastery in Westbahnstraße 13, in Vienna. We roast small batches (10kg max) because we have better control over all the parameters that impact the flavour profile and can therefore better guarantee consistency.

Ethically Sourced

We ensure traceability for all our coffees. Our house Espresso from Nicaragua is directly traded without any middle-men and when we go through a wholesaler, complete transparency is a must. We want to provide our customers with the ability to know where their coffee comes from down to the name of each farmer.
